In several areas of Japan, Wagyu beef is shipped & labeled with regional names. Popular examples include Yonezawa Beef, Kobe Beef, & Matsusaka Beef. To ensure fair trading, beef in Japan is graded by the Japan Meat Grading Association on the basis of the yield grade & meat quality grade. “A” of “A5” means the yield grade, while “5” shows the quality grade. Moreover, the Japanese beef grading system has five quality grades. They are (1) marbling, (2) meat color and brightness, (3) firmness and texture of meat, (4) color and luster, & (5) quality of fat.
